Other than the mention in Aliens: Labyrinth, can anyone think of examples in the EU where bug farmers are referenced?

In what context?

Aliens: Stronghold had a team farming Aliens. Kidnapped I think mentions something similar.

Or do you mean Aliens doing the farming?

Where humans who had set up hives deliberately were specifically called bug farmers or a name to that effect.
