You could just have low blood sugar.  Hypoglycemia.

Think I might have diabetes, or something similar. Every time I get hungry, shortly thereafter (if I don't eat) I get headaches, weird heart rates, trouble breathing, some weakness, and occasionally a 'blood rushing to the head' feeling.

Have you gotten checked? If not, it might be a smart thing to do.
