But yes, you can really tinker with it. White cheeses tend to not melt easily and gives the sauce a slight cottage texture. A few drops of ketchup can add sweetening. But when the spices come out, things get magical.

There's a barbecue place out in the sticks here that serves Mac n cheese, but made with queso. Holy cow, it's seriously one of the best foods I've ever had, but I feel ashamed every time I leave  :D
