With pancakes, I prefer banana and walnuts in the batter, or PB/apple on top. I honestly don't eat too many waffles. Waffles with honey are nice though.
One thing I detest is when both are loaded with butter so they can be moist on their own without toppings, specifically when dining out. I'd rather they be as plain and healthy as possible, so I can mess them up on my own (i.e. toppings) thank you very much
