Once Theon had become ''Reek'' and was totally under Ramsay's control, they put Theon/Reek into armour and clothes to serve in the ruse. I'm assuming that's why Theon is in armour here.

I'm two Reek chapters into ADWD, and was kind of wondering the same thing. I guess that's a bit less graphic on the show so far?

Same reason why Tyrion didn't have his nose cut off. Less time messing with make up and prosthetics. Plus, being a visual medium, no one wants ugly people on tv.
