There's a lot of good AvP stuff, if you're willing to go beyond the movies.
Here's my list:
1. The original Aliens vs. Predator comic series, the one that started it all. I really like the story, the setting and the characters, it's all well done. It expanded the Predator culture, and the fact that it was made before Predator 2 is impressive, since they only had the first movie (and the concrete jungle comic) to draw inspiration from. Unfortunately, since it was made before Alien3, there is a few inconcistencies with the Aliens that didn't get any characteristics from their hosts, but its a minor thing. It was also turned into a novel that, like it or hate it, created the whole Yautja concept.
2. Aliens vs. Predator 2 game, my favorite game of the franchise, and the one I've spent more time playing. A lot of variety with the three campaings, and a fun multiplayer. Playing as the Marine was one of the better experiences I had in games back then.
3. Aliens vs Predator Arcade. This needs to be released on steam ASAP.
4. The Rage War. I love novels, and this trilogy was a blast to read.
5. Three World War, the comic that concludes the Machiko Noguchi story.
6. A lot of the one shots: Duel, Blood Time, Chained to Life and Death, Hell Bent, Booty...
7. Aliens vs. Predator 2010 game. Don't like the Alien campaing, but the Marine and the Predator ones are great fun.
8. Fire and Stone and Life and Death, loved the crossovers bringing stuff from Prometheus into the mix.
