It's a type of sour cream.  I actually bought the wrong type, but it ended up pretty good nonetheless.

Fair enough. You should try unsweetened yoghurt with a sprinkle of sweet paprika and fresh coriander (cilantro). Or mint, if you're not into coriander. Great with refried beans and/or pulled pork.

1) Newspaper chips are nostalgic but pretty poisonous lol.

2) Broth was beef stock, golden soy sauce and sesame oil. Seasonings were chili flakes and coriander flakes. Garnish of diced garlic, and finely shredded leek, celery leaf and carrot.

Nah, just some quite nice chinese noodles, not sure of exact style/name coz I get them out of cheapo packs lol.
