As a kid I always referred them as AT-ATs. Not A-T-A-Ts, but "at-ats".

I was actually of toy-playing age during the time between the release of TESB and ROTJ though.  What I'm describing is a phenomenon specific to people at least as old as I am.

That's understandable though even when you remove the toys. Their debut was on Hoth. It's easy for a kid to assume they were meant for snowy terrain.

Yeah, we also referred to them as "Snow Walkers" or just plain "Walkers" back then. I think we called the AT-ST's "Chicken Walkers" IIRC.

I don't think they're ever referred to as AT-AT's or AT-ST's in the OT films are they?

Nope, just walkers.  The AT-STs were called Scout Walkers by Kenner so that's what we went with.
