The dinner I made tonight:

The fish I used for this one tonight was Snapper, caught barely 2 hours before I began cooking. This is a yellow curry popular both in India and Malaysia, which I've been cooking since I was eight years old and have fine tuned to my own tastes over the years.



Fish Molee (moo-lee) ~ the [cb] custom version

Serves 2-4


Ingredients:

4 fish fillets

1 can of coconut cream

3 cloves of garlic
3 pickling onions
1 1"x 3" piece of ginger

3-6 teaspoons of turmeric, to taste
3 hot green chillies


Method:

Finely chop the garlic, onions and ginger and fry in 2tbsp of ghee/butter. Once translucent and golden, add the turmeric and chopped chillies. After mixing these through, add the coconut cream and simmer for 5 minutes.

In a glass casserole dish, lay down a layer of the curry sauce, and then place the fillets in there. Cover with the remaining sauce and put into a preheated oven at 200 Celsius at the top of the oven, for ten minutes or until the fish is cooked all the way through, whichever is faster.

Garnish with chopped chives and/or coriander, depending on preference, and serve with rice and a green salad.
